Deep Fried Sopaipillas

Vegetable oil for deep fryer
1 cup of all purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
1-1/2 tsp. nonfat dry milk
1 tsp. vegetable shortening
1/2 cup cold water

Heat the
oil in an electric deep fryer to 370°F – 380°F. Combine
flour and next 4 ingredients in a food processor and pulse for 3-4
times. With machine running, pour in water through feed tube and
process about 15 seconds, or until ingredients begin to come
together.

Transfer mixture to a lightly floured work surface and mix
by hand, adding more flour as needed, to make a soft dough.

Roll into a circle about 1/8 inch thick and cut each circle into
12 wedges. Add 2 or 3 at a time to fry basket. Lower into hot oil
and fry 5-7 minutes, turning several times, until golden. Drain
on absorbent paper and repeat with remaining sopaipillas. Serve
with honey, syrup, guacamole or salsa

Delightful Applesauce Cake

2 cupfuls flour
1/8 teaspoonful cloves
1 1/2 teaspoonfuls cinnamon
1 teaspoonful nutmeg
1 teaspoonful baking soda
1/4 teaspoonful salt
1 cupful sugar
1 cupful unsweetened apple sauce
1/3 cupful fat
1 cupful raisins, cut in halves

Mix the sugar and apple sauce; add the fat. Mix the dry ingredients. Through a sifter, add them to the apple sauce mixture.

Flour the raisins and stir them into the batter. Turn into a greased loaf-cake pan or into two layer-cake pans.

Bake in a moderate oven at 375 degrees F.

Fried Twinkies

6 Twinkies
Popsicle sticks
4 cups vegetable oil
Flour for dusting
1 cup milk
2 tablespoons vinegar
1 Tablespoon oil
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt

Chill or freeze Twinkies for several hours or overnight.

Heat 4 cups vegetable oil in deep fryer to about 375 degrees.

Mix together milk, vinegar and oil.

In another bowl, blend flour, baking powder and salt.

Refrigerate while oil heats.

Push stick into Twinkie lengthwise, leaving about 2 inches to use as
a handle, dust with flour and dip into the batter. Rotate Twinkie until
the batter covers entire cake.

Place carefully in the hot oil. The Twinkie will float, so hold it under
with a utensil to ensure even browning. It should turn golden in 3 to 4
minutes. Depending on the size of your deep fryer, you might be able to
fry only one at a time, two at the most.

Remove Twinkie to paper towel and let drain. Remove stick and allow
Twinkie to sit for about 5 minutes before serving.

Raisin Apple Crisp

3 Apples
1/4 cup Raisins
1/4 cup Chopped nuts
1/8 cup Water
3/8 cup Brown sugar
1/8 teaspoon Cinnamon
1/2 tablespoon Lemon juice
2 tablespoon Flour
2 tablespoon margarine
1/8 teaspoon Salt

Wash, pare, core and slice apples thinly. Mix with raisins. Place in a greased casserole Add cinnamon, salt, lemon juice and water Work sugar, flour and margarine together to form crumb like consistency.

Spread over apple and raisin mixture.

Bake in 380 degree oven for at least 30 minutes.

Batter Fried Frog Legs

2 to 2 1/2 pounds small frog legs
1/3 cup lemon juice
Crushed ice
1/3 cup milk
2 eggs, separated
2 teaspoons vegetable oil
Salt and pepper
Dash cayenne pepper
2 cups all-purpose flour
vegetable oil

Wash frog legs thoroughly. Place in a large bowl; sprinkle with lemon
juice, and cover with crushed ice. Refrigerate 1 to 3 hours. In a small
bowl, whisk together milk, egg yolks, and 2 teaspoons oil.

Beat the egg whites until stiff; fold into milk and egg yolk mixture.
Sprinkle frog legs with salt and pepper, and a little cayenne,
dip each in milk-egg mixture, then dredge in flour. Heat
vegetable oil in a deep-fryer or skillet to 375°. Fry frog legs until
golden brown. With a slotted spoon, transfer to paper towels to drain.

Apple Gelatin Delight

12 apples, pared and cored
1 1/2 pound of sugar
1 large lemon
1 ounce of gelatin
and water as necessary

Put the apples on with water enough to cover them and let them stew until they look as if they would break then take them out and put the sugar in the same water.
Let the syrup come to a boil, put in the apples and let them stew until done through and clear then take them out, slice into the syrup one large lemon.

Add an ounce of gelatin dissolved in a pint of cold water. Let the whole mix well and come to a boil; then pour upon the apples. Chill
